  • ¼ teaspoon cinnamon

Instructions
 

  • Preheat the oven to 200°F (93°C). Line a large rimmed baking sheet with parchment.
  • Use a sharp knife or apple corer to remove the core from the apple. Use a mandoline or sharp knife to slice the apple as thinly as possible. The slices should be about ⅛-inch thick, or thinner, if you prefer, but not so thin that you can see through them.
  • Arrange the apple slices in a single layer on the prepared baking sheet. You can get them very close together, but don't overlap. Overlapped slices will fuse together during baking. Sprinkle with cinnamon.
  • Bake until the apple slices are very crisp, 2 to 2 ½ hours. To check for doneness, remove a slice from the tray in the oven and let it cool for about 1 minute. Once cool, it should be very crisp. If not, continue cooking for 20 to 30 minutes more and check again.
  • Remove the chips from the oven and let cool completely. Transfer to a sealed bag or jar and store for up to 6 months.
