Baked Cinnamon Apple Chips

Dusted with cinnamon and slowly baked until shatteringly crisp, these homemade apple chips are a healthy snack to make with your autumn apples.

- 1 large apple
- ¼ teaspoon cinnamon
Preheat the oven to 200°F (93°C). Line a large rimmed baking sheet with parchment.
Use a sharp knife or apple corer to remove the core from the apple. Use a mandoline or sharp knife to slice the apple as thinly as possible. The slices should be about ⅛-inch thick, or thinner, if you prefer, but not so thin that you can see through them. Arrange the apple slices in a single layer on the prepared baking sheet. You can get them very close together, but don't overlap. Overlapped slices will fuse together during baking. Sprinkle with cinnamon.
Bake until the apple slices are very crisp, 2 to 2 ½ hours. To check for doneness, remove a slice from the tray in the oven and let it cool for about 1 minute. Once cool, it should be very crisp. If not, continue cooking for 20 to 30 minutes more and check again.
Remove the chips from the oven and let cool completely. Transfer to a sealed bag or jar and store for up to 6 months.
- Cooking time--The thickness and moisture content of your apple slices will determine the cooking time. This may vary by up to 1 hour.
- Storage--To maximize the shelf life of apple slices, make sure that they are completely dry. After baking the chips should be crisp and crunchy like a potato chip, without any chew.
