I’m a sucker for a good banh mi sandwich, and much of that is due to how much I love those crisp and tangy shredded carrots in it. This recipe makes a great pickle in just minutes, and is perfect for adding to your sandwiches and rice noodle bowls. I use rice vinegar for these pickles to give it that classic Vietnamese flavor, and my preference is to cut the carrots using a julienne peeler or by hand to get the right size, but you can use your food processor, if you prefer.

- Carrots–Use firm carrots of uniform size. You can leave the skin on, but scrub them well before shredding.
- Pickling salt–I recommend using pickling salt for canning to prevent your pickling liquid from becoming cloudy. You can use kosher salt, but check the label to make sure it doesn’t contain any anti-caking agents.
- Rice vinegar–This adds a great flavor to the pickling liquid, but you can substitute regular white vinegar or apple cider vinegar, if you prefer.
How to Make Shredded Carrot Quick Pickles

1. Pack the shredded carrots into a 1-pint jar.

2. Combine the vinegar, water, sugar, and salt in a small saucepan.

3. Bring to a simmer, stirring until the sugar and salt dissolve.

4. Pour the brine over the carrots. Cover and chill for at least 1 hour.
