Equipment

Ingredients

  • 2 pounds (908 g) transparent (or other thin-skinned) apples cored and chopped
  • ¼ cup water
  • 3 tablespoons brown sugar plus more if needed
  • ½ teaspoon ground cinnamon

Instructions

  • Combine the apples, water, sugar, and cinnamon in a large pot. Bring to a simmer over medium heat, cover the pot, reduce the heat to low and cook until the apples are very soft, about 12 minutes.
  • Remove the lid and continue cooking until the applesauce thickens slightly, 3 to 5 minutes. At this point many of the skins should have dissolved into the sauce, but it's fine if there's still a few pieces.
  • Remove from the heat and use an immersion blender (or transfer to a regular blender) and blitz until very smooth.
  • Taste and adjust the sweetness, if needed.
  • Transfer to a clean 1-pint jar with lid and store in the fridge for up to 2 weeks or in the freezer for up to 1 year.
